Happy Summer! One of the best things about summer is the transformation in the produce aisle at the grocery store. From watermelon to summer squash, there are so many reasons to love eating during the summer months. Here are a few summer-friendly recipes that are sure to be a hit as you enjoy the warmer temperatures and sunny skies. The nice thing about these recipes is they are already measured for smaller serving sizes, and they are great to make with the grandkids when they come to visit! Breakfast: Banana Split Oatmeal Yield: 1 serving Ingredients: ⅓ cup oatmeal, quick-cooking (dry) ⅛ teaspoon salt ¾ cups water (very hot) ½ banana (sliced) ½ cup frozen yogurt, non-fat Preparation: In a microwave safe cereal bowl, mix together the oatmeal and salt. Stir in water. Microwave on high power for 1 minute. Stir. Microwave on high power for another minute. Stir again. Microwave an additional 30-60 seconds on high power until the cereal reaches the desired thickness. Stir again. Top with banana slices and frozen yogurt. Lunch Chinese Chicken Cabbage Salad Yield: 1 serving Ingredients: 4 cups napa cabbage, sliced thin 1 TBSP extra virgin olive oil 1 TBSP rice vinegar 1 tsp soy sauce 1 TBSP minced ginger 1 medium clove garlic, pressed 2 TBSP chopped cilantro 4 oz cooked chicken breast, shredded or cut into 1” cubes Preparation: Toss all ingredients together and serve! Dinner Delicious Turkey Meatloaf Yield: 6 servings Ingredients: 2 zucchini (grated) 2 lbs ground turkey 6 ozs canned tomato paste ½ cup plain breadcrumbs 1 large egg ¼ oz onion soup mix 1 TBSP chopped fresh thyme (2 tsp dried) ½ tsp black pepper Optional: Additional seasonings and vegetables Preparation Preheat oven to 350 degrees. Spray 9x5x3” glass pan with cooking spray. Combine all ingredients gently until incorporated. Press mixture into dish and shape into a loaf. Bake 70 mins or until it registers 160 degrees.
